Try this Smokey Ratatouille and Baked Trout Recipe

This Mediterranean medley with grilled fish makes the perfect mid-week meal.
Even better: trout, aubergine, lemon and cherry tomatoes are all on offer at JJ Foodservice until August 25th.
What you need
- 2 aubergines, cubed
- 2 courgettes, chopped
- 1 red pepper, deseeded and chopped
- 200g cherry tomatoes, sliced
- 2 garlic cloves, crushed and chopped
- 1 red onion, diced
- 2 tbsp olive oil
- 1 tsp mixed herbs
- 4 x frozen trout fillets
What to do: Ratatouille
- Heat two tbsp of olive oil in a pan
- Fry the aubergine and courgette on a medium heat, until golden
- Add the onion and garlic, stir for one minute. Season well
- Add tomatoes and red pepper, stir until softened
- Break up the tomatoes with the back of a spoon
- Add the lemon, mixed herbs and an extra splash of olive oil
- Reduce heat and simmer until vegetables are fully cooked through
TOP TIP: For a smokey kick, add a teaspoon of paprika while frying the veg
What to do: Trout
- Preheat the oven to gas mark 180
- Place trout on tray and season well
- Add squeeze of lemon and drizzle of olive oil
- Bake for 20 mins and serve with the ratatouille
